Yukon Gold potato leek soup serves 4
Ingredients
  • 3 tbsps unsalted butter
  • 4 large leeks white and light green parts only roughly chopped, about 5 cups
  • 3 cloves of peeled and smashed garlic
  • 2 lbs Yukon Gold potatoes, peeled and roughly chopped into 1/2
  • 7 cups chicken or vegetable stock
  • 1/2 cup TRV Chardonnay
  • 2 bay leaves
  • 3 sprigs thyme
  • 1 tsp salt
  • 1/4 tsp ground pepper
  • 1 cup heavy cream
  • chopped chives for garnish
Directions

Melt the butter over medium heat in a large soup pot. Add leeks and garllic. Cook, stirring regularly until soft and wilted, about 10 minutes. Add potatoes, broth, wine, bay leaves, thyme, salt and pepper to pot and bring to boil. Reduce heat to simmer and cover, cooking until potatoes are very soft, about 15 minutes. Fish out thyme and bay leaves. Purée with immersion blender or blender. Add heavy cream and simmer. Adjust salt and pepper to taste. Simmer longer for a thicker soup. Enjoy with TRV 2018 Chardonnay.
