Tagliata con Rucola, serves 2
Ingredients
  • 8 ozs beef rib eye steak, grilled to your preference and sliced thin
  • salt and pepper
  • 1/8 tsp dried oregano
  • 7 ozs arugula
  • 1 oz microgreens
  • 4 tbsps EVOO
  • 2 tbsps red wine vinegar
  • 1/4 cup shaved parmesan cheese or pecorino Romano cheese
  • 1/4 red onion, thinly sliced
  • 1/2 cup halved cherry tomatoes
Directions

Season steak with salt, pepper and oregano, then grill until rare, 2-3 minutes per side. Rest steak 5 minutes then slice.Toss the meat and meat juices with the arugula, then drizzle with the olive oil and vinegar and toss again. Add remaining salad ingredients and top with shaved cheese and ground pepper. Enjoy with TRV 2019 Pinot Noir.
