Chinese Chicken Salad serves 2-3
Ingredients
- 2 tbsps light soy sauce
- 3 tbsps rice vinegar
- 1 tbsp toasted sesame oil
- 2 tbsps Avocado oil
- 1 tsp sugar
- 1 1/2 tsps fresh ginger, grated or finely chopped
- 1 garlic clove
- 1/2 tsp black pepper
- 4 cups finely shredded Napa cabbage
- 1 1/2 cups finely shredded red cabbage
- 1 cup finely julienned carrot
- 2 cups shredded chicken
- 1/2 cup scallions finely sliced on the diagonal
- 1 bunch of chopped cilantro
- 1 1/2 cups crunchy noodles
- 1 tbsp toasted sesame seeds
Directions
Dressing: Combine soy sauce, rice vinegar, sesame oil, avocado oil, sugar, fresh ginger, garlic and black pepper in a mason jar. Shake well and set aside.
Salad: Place cabbage, carrot, chicken, scallions, cilantro and half crunchy noodles in bowl. Toss with dressing. Top with more crunchy noodles and sesame seeds. Serve immediately with TRV 2019 Riesling.
